It is a fusion of classic Taiwanese and Western styles, having traditional octagonal windows embellished with silver frames and ironwork. Chi Kan West House is not just the resurrection of an old building back to its heyday, but more the voice of an opera, singer vocalizing a 94-year-old song of Tainan and the inheritance of a culture.There are Three Songs to the Opera of the Heyday of this Old HouseOverture: Re-visiting this Old House Chi Kan West House is a four and a half-storied blue building hidden in a narrow alleyway of the prefectural city of Tainan. It is a blend of Taiwanese and Western architecture. When stage one was constructed in 1924 it was one story tall but in 1953 stories were added to become the second tallest building in the city, Hayashi Department Store being the first.The building's renovation into a four-story building was because of the filial piety of the Hong Family brothers for their mother. She was not only elderly, but also had bound feet, and the location and height of Chikan enabled her to watch the Taiwanese Operas performed on stage at Fort Provintia. However, time goes by, and all good shows must end. Eventually, this old house became a long-neglected building with its elegance fading away. It was not until 2014, under strange and unimaginable circumstances that a married couple bought the old house. With a large investment, exceeding their budget, they insisted on refurbishing instead of demolishing it. To preserve it, they had to recruit local elderly masters whose carpentry skills will soon to be lost. It was finally restored into a historical site, embellishing again the glory of its original appearance. Now Chi Kan West House is again unique among its contemporaries not only reborn, but also revitalizing its neighborhood.Act One: Chi Kan West House and the Pavilion of the Royal SealThis old house is now being revisited because of the diligence and selflessness of a couple. Together they not only carefully preserved its 94-year history, but also brought traditional Taiwanese and foreign vegetarian fare to the table with the Chikan Royal Seal Restaurant on the first two stories. Now this prefectural city's inhabitants can see the heyday of Chi Kan again, hear the story of filial piety, and broadcast it, handing down the tradition generation to generation.Act Two: Fu Lu Shou Pineapple ShortcakeFrom the Heart of Filial Piety to the Taste of GoldThe Grandma of Chi Kan West House is well over 80. To her, most food is difficult to chew, hard to digest, or she's not hungry at all. To stimulate Grandma's appetite, the couple came up with the Fu Lu Shou Pineapple Shortcake that Grandma loves to eat because it is "thin on crust and thick on filling" and easy for her to chew. The main ingredient of Fu Lu Shou Pineapple Shortcakes is local Taiwan pineapples. The crust is made of French flour, unique for its soft texture. It is not only delicious but also easy to digest.
