I have a client who needs to make a high quality Rice Krispies, similar to the Kellogg„s product, this is to be used in chocolate bar manufacture. I know this is possible with a twin screw extruder (may even be possible with a single screw, I have no experience), as I did manage to get a crowd to make the correct quality some years back with a twin screw machine. The current extruded Krispies made in South Africa are very poor quality (flavour as well as under cooked starch)I am uncertain as to whether vacuum is also required. I know that it is vital to have slight variation in size - otherwise a bar made of the Krispies is not resilient enough for packing/transport. In addition some of the surface bubbles need to have popped so that the chocolate holding the bar together has a firm grip of some of the Krispies.Out-put required is ~300kg/hr, and we will need a ribbon blender (or equivalent to mix the ingredients- Rice flour, sugar, malt extract(powder), salt & water (latter will have to be cooked off completely). The water would be adjusted to ensure there was enough present to both cook out the starch fully & ensure the puffing up of the granules.I hope you or your clients have had some experience of this sort of application.I have founf European supplier who say that a 6okW driven extruder is required, this should feed into a hot air drier to remove moisture (from ~10% to2%) and toast the product.Kind regards,John
